Washed Process — Pink Bourbon
This coffee is produced at Finca La Providencia in Pitalito, a subregion of Huila, Colombia by Alvaro Perdomo Ospina. This lot is Pink Bourbon, which is a variation of Bourbon in between Red and Yellow that appears striped with pinkish-orange hues when fully ripe. Bourbon was selected for its high quality and complexity and it really shows in this coffee.
Washed Process, or “wet” process, is used all over the world in many different variations. Typically, the skin of the coffee cherry is removed and the beans are left with some fruit mucilage stuck to them. The beans go through a mild fermentation to break down the sugars and loosen the fruit from the beans, and are then rinsed and dried. Washed process coffees tend to have clean, clear flavors and a brighter acidity.
Bourbon is named after the island where it was discovered which is now called Reunion Island. It is one of two main cultivars of Arabica and is known for high quality but low to moderate production yields. Pink Bourbon is a variation of Bourbon that has cherries that are pinkish-orange in color when fully ripe.
