Sitio Marmelerio is a family dream that has come to be reality. Owner Jader Jesus de Camargo wasn’t born into a coffee family like many Brazilian producers are, but his wife’s family has been in the industry for generations. Now he produces some of the best coffees in Campanha.
Washed Process, or “wet” process, is used all over the world in many different variations. Typically, the skin of the coffee cherry is removed and the beans are left with some fruit mucilage stuck to them. The beans go through a mild fermentation to break down the sugars and loosen the fruit from the beans, and are then rinsed and dried. Washed process coffees tend to have clean, clear flavors and a brighter acidity.
Bourbon is named after the island where it was discovered which is now called Reunion Island. It is one of two main cultivars of Arabica and is known for high quality and low to moderate production yields.
Typica is the base from which many coffee varietals have been developed. Like the other Coffea Arabica varieties that have been developed from it, Typica coffee plants have a conical shape with a main vertical trunk and secondary verticals that grow at a slight slant. Typica coffee yields a low production but excellent cup quality.
